Hi there Lynn Hill suggested your Substack and I’m already loving it. I just started mine not to long ago. I recently achieved my sommelier pin so I like to write and wine and food plus review wines. I have recently tried a pairing and wanted your take on it. I smoke or grill salmon with lemon slices and a little thyme on top. I pair it with a nice Oregon Pinot noir or a Burgundy. I think the cattiness of the fish lends itself to a high acidic red. I also like a nice Chablis as well. Thoughts?
