I use Nigella's dutch baby recipe, scaled to 2 eggs, 2 tsp sugar, 100ml milk, 66g flour. The amount works well in my cast iron skillet. I love it as a relatively light, easy, quick to make dessert for two. :-)

We've literally just been talking about almonds in a crumble topping. I'll definitely give this a go! My favourite apple cake is Nigel Slater's Bramley Apple Shortcake from his Kitchen Diaries book. Packed full of apples! I'm also partial to an apple dutch baby (which also combines well with other fruit).

Never made a dutch baby so must have a go at that sometime!

My current favourite apple recipe is Felicity Cloake's Dorset apple cake.

Haven’t made that but will look it up. Love Felicity’s recipes.

I am just about to try to wrestle a hybrid of brown betty and a crisp into shape...might be a disaster but I have high hopes!

Hope the wrestling was successful, Mark. Do post a pic on a note!

I shall - too wet to pick apples yesterday so I shall give it a go on sunday, if the wrestling is successful!

I already have a batch of cooked apples in the freezer......plus we're heading to the UK tomorrow to see family and friends..... hopefully I'll get a chance for some traditional cooking 🤗

Love this recipe- I have all the ingredients but black raspberries not red ones!

No problem with that, Kate. Go for it!

I thoroughly enjoyed this piece, blending culinary nostalgia and practical inspiration. The idea of revisiting recipes from older cookbooks is brilliant, and I loved the inclusion of the apple, raspberry, and almond crumble recipes.

What a wonderfully timely post to find! My apple trees need some attention, and you've reminded me that there are other things to make than crumble, delicious though that is. One of the most unctuous puds I know for autumn is Apple Charlotte, with layers of lemony suet (vegetarian works just as well as the original kind) between the soft apples. I shall put suet on the shopping list, but on Sunday - I only make pud on Sunday and it's usually ice cream and fruit - I'll do apple, raspberry and almond crumble. Possibly with ice cream on the side.
