In the UK we’re in full-on Coronation mode which inevitably means a revival of the splendidly retro Coronation Chicken which was invented for Queen Elizabeth’s coronation in 1953. For those of you who are not familiar with it it’s chicken in a fruity curried mayonnaise (which is actually much nicer than it sounds).
I was assuming that was going to be the basis for the Coronation quiche that King Charles has chosen to mark his investiture but in fact it’s a veggie version with cheddar, spinach and broad or fava beans (not totally convinced about broad beans in a quiche).
Karen of Lavender and Lovage has created a much more appealing version with asparagus and feta on her website I’d be much more inclined to make. She’s also come up with some other good ideas for Coronation parties including coronation chicken scotch eggs which you can apparently make in an air fryer. (Slightly resisting the idea but she describes it as ‘an absolute triumph’.)
