I love olives, but really don't like those cheap stoned black ones in tins, never knew they were dyed, might it explain it. My favourite olives are local to where I live in Provence, Olives cassées, they're the hard green ones that are broken with a stone (not crushed) and after 10 days of soaking and changing the water daily are preserved with brine, wild fennel and bay leaves. I tried it once, not very successful. Buy them in my local market now.
Didn't discover olives until a trip to Greece, now a snacking staple. if anyone has a Tesco near them try the Three olive boule..... marvelous...and it has to said that Kalamata olives are the best....
