I have just bought some chicken thighs bone in and skin ON, looks like I will be adding this to our weekly menu.
I bet it would be nice made using preserved lemons - I might try that

Yes I think it would - maybe in addition to the fresh lemon. Also you could replace half the potato with sliced courgette and the thyme with some mint
