Summery spaghetti with fresh tomatoes, goats cheese and dill
Just because it's summer doesn't mean you have to give up on pasta
I was sent a huge box of tomatoes from Isle of Wight Tomatoes the other day so had to make them the focus of several meals, pasta of course being one. (Well actually two, as I decided to conduct an experiment as to which wine went best with different sauces.)
It might seem counterintuitive to cook and eat pasta in this weather - actually it’s not that hot, just humid - but it does diminish ones desire to spend time in the kitchen.
A fresh tomato sauce - almost a salsa - is the solution, taking advantage of whatever’s in the fridge*
As usual in this series the recipe’s for one but you can easily scale it up.
